Asian & Oriental Recipes ~ Soup
Kumara and Pumpkin Soup
Serving: 4-5 people.
Preparation: 5 minutes. Cooking: 5 minutes.
1 packet Japanese Curry Spice Paste
450g cooked kumara, cut into bite-sized pieces (set aside
150g for simmering)
300g cooked pumpkin or butternut squash, cut into bitesized pieces (set aside 150g for simmering)
2 cups (440ml) water
2 cups (440ml) milk
3 tbsp crushed cashew nuts or almond flakes as garnish
Place kumara, pumpkin or butternut squash, water and
Spice Paste on a food processor and blend until smooth.
Combine mixture and milk in a non-stick saucepan; bring
to a boil.
Add bite-sized pumpkin and kumara pieces; simmer for 1
minute. Garnish and serve hot.
You may adjust the thickness of the soup according to your liking.
