Baked Fish Pasta
Serving: 4 people.
Preparation: 10 minutes. Cooking: 20 minutes.
1 packet Thai Pad Thai Noodles Spice Paste
390g cooked pasta (penne)
250g salmon fillet, cut into bite-sized pieces
100g Mozzarella cheese, grated
60g broccoli, cut into small florets
1 small onion, chopped
1 tbsp vegetable oil
Parsley, finely chopped as garnish (optional)
Heat oil in a non-stick pan on medium heat. Add onion and
fish; stir-fry for 3 minutes.
Add Spice Paste, broccoli and pasta; stir-fry for 5 minutes.
Place the mixture in an oven-proof dish. Sprinkle cheese
over the top and bake in a preheated oven at 180°C
(350°F) for 5-10 minutes or until cheese turns light brown.
Garnish and serve warm.
Vegetables of your choice (asparagus or pumpkins) may be used instead of broccoli.
