Asian & Oriental Recipes ~ Soup
Thai Tom Yum Soup
Serving: 4 people.
Preparation: 15 minutes. Cooking: 10 minutes.
1 packet Thai Tom Yum Soup Paste
250g mussels, squid, and prawns
60g sliced button and oyster mushrooms
Lemon grass (sliced)
Kaffir lime leaves
Bring the water to the boil and add Tom Yum paste.
Add lemon grass, chillies and lime leaves. Stir well.
Add seafood, then mushrooms.
Stir again then bring back to the boil.
Add lime juice and fish sauce to taste.
Serve piping hot.
For an extra spicy experience, be liberal with the chillies. Try to use Thai bird-eye chillies for authenticity, but be warned - they have a kick!
